Usually you will find them behind the bar and in server stations in the back. They not only serve to carry out different tasks such as washing glasses, and hands and cleaning flatware and stock pots, but also they are a vital part of the food safety program of the restaurant. They are the things on which health inspectors focus. You will find here some helpful information about the types of sinks if you intend to start a new restaurant.
Types of sinks
- Hand sinks are generally standard sinks for the washing of hands.
- Washing sinks may have one to four compartments used to rinse and wash dishes. For an HACCP program a three compartment is needed for the good cleaning of dishes. Of course, a larger compartment sink will required for the washing and filling of big cookware and stock pots.
- Bar sinks are meant to wash glasses behind the bar.
- Note that you must buy only NSF approved for these sinks.
Types of faucets
- Deck Mount faucets directly mount onto the sink. The measurement of the center of holes is important before ordering.
- Wall Mount faucets are mounted from the wall. They are the most common types in restaurants.
- Pot Filler Assemblies are wall mounted with a hose or an extended and swiveling spout which allows the easy filling of pots.
- Pre-rinse Assemblies are designed to rinse dirty tableware and cookware quickly before placing them in the washing machine.
The type of faucet will depend much on the whether your pipes come vertically from the sink or horizontally from the wall. Leaky faucets allow thousand of gallons of water to be wasted for you have pay for it every year. Wasted water also means wasted money. With time the washers in the stem wear out and cause the faucet to leak. It is better to spend $5 on a washer than thousands of dollars on waste water. So change them as soon as they are worn.
Restaurant sinks and facets Care
Commercial sinks are made of rust resistant and durable stainless steel. But you can extend their life cycle by proper maintenance.
Never use abrasive pads or detergents to wash faucets and sinks.
By itself steel is not rust resistant and stainless. A thin layer of nickel and/or chromium protects it and prevents it from rusting while giving it the shine. Using abrasive pads or detergents will develop holes that will allow rust to form.
Wipe sinks and faucets with the help of a soft rag everyday when the day’s work is over. Otherwise rust and moisture will tarnish them overnight.
Use a garbage disposer
It is important to install a garbage disposal for sinks that collect food waste. It increases the efficiency of your kitchen, keeps it green, avoid nasty smell and bacteria development.
You save money by their proper maintenance in the long run.
